How To Eat Pumpkin Pie Without Guilt

Generally speaking, I’m not a big fan of pie. There are a lot of other desserts I would chose over pie. However, during the holidays, there’s something special about a slice of pumpkin or apple pie. I needed to figure out a way to enjoy a slice without breaking my commitment to eating my trigger foods – gluten, dairy, and soy.

First came the pie. I found a local bakery, Sweet Freedom in Philadelphia, that makes allergy-friendly pies. (There are also online services like Paleo to Go that have great options, as well as online recipes if you wanted to bake one up yourself.)

Next – and in my opinion the most important part of pie – comes the cool whip. I absolutely love SoDelicious Cool Whip. It’s in most grocery stores, or you could diy it with a single can of coconut milk and a teaspoon of honey.
